Molasses Cookies

In honor of the holidays, I thought I would post one of my favorite holiday treats. I swear there is nothing better than the smell of baking molasses cookies. The best part is the recipe makes a ton of cookies, so there's plenty to eat and give away (actually that can be a bad thing depending on how many you eat...I've already had five since this morning).

Grandma Mathias' Molasses Cookies

1 1/2 cups shortening
2 cups sugar
1/2 cup molasses
2 eggs
4 teaspoons baking soda
4 cups flour
1 teaspoon cloves
1 teaspoon ginger
2 teaspoons cinnamon
1 teaspoon salt

Melt shortening over low heat. Cool and add to sugar, molasses, and egg. Beat well. Sift together flour, soda, cinnamon, cloves, ginger, and salt. Add to first mixture and mix well. Chill. Form balls of about one teaspoon size from dough. Roll balls in granulated sugar. Cook on ungreased cookie sheet. Bake at 375 for 8-10 min. Yeilds :75+

Shredded Pork

This is my favorite "go to" recipe whenever we have company. I also make it for my family at least twice a month.

Shredded Pork

1 Pork loin roast (or tenderloin)
1/4 cup onion flakes
2 Tbs. Adobo seasoning (this is hard to find...can use your fave seasoning or omit)
1 Tbs. cumin
1 can chicken broth

Place pork in crock pot, sprinkle onion flakes and seasonings on top. Pour broth over top. Cook on high for 1 hour, then on low for 5-6 hours. One hour before serving, shred pork (squishing it with tongs works well). Continue on low for last hour.

Serving suggestions:

Serve on flour tortillas with any combination of the following:
grated cheddar cheese
sour cream
black beans
rice
salsa
etc.

You can also put it on a salad!

Fabulous Dessert

I made this recipe yesterday for dessert and it was very yummy!

Banana Cheesecake Pie

INGREDIENTS
1 package (11.1 ounces) no-bake home-style cheesecake mix
1/2 cup crushed vanilla wafers (about 15 wafers)
2 tablespoons sugar
1/2 cup cold butter
1 cup plus 1-1/2 cups milk, divided
1 package (3.4 ounces) instant banana cream pudding mix
2 medium bananas, cut into 1/4-in. slices
1 cup whipped topping
1/4 cup chopped pecans, toasted


DIRECTIONS
In a large bowl, combine contents of the crust mix, wafers and sugar; cut in butter until mixture resembles coarse crumbs. Press onto the bottom and up the sides of an ungreased 9-in. deep-dish pie plate. In a large bowl, beat 1 cup milk and contents of filling mix on low speed until blended. Beat on medium for 3 minutes or until smooth (filling will be thick). Spoon into the crust. Chill for 30 minutes. Meanwhile, in a small bowl, whisk remaining milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set (pudding will be stiff). Arrange banana slices over filling. Spread with pudding, then whipped topping. Sprinkle with pecans. Chill for at least 1 hour before serving. Serves 8.

1 Hour Bread Recipe

THIS MAKES 2 LOAVES OF BREAD
5 1/4 C. bread flour (Lehi Roller Mills Turkey Flour is best- get it at Costco)
1/4 C. sugar
1 1/2 t. salt
4 1/2 rounded t. Saf-Instant Yeast (for best results use this brand-get it at a kitchen store)
1 1/2 T. liquid lecithin (get this at a kitchen store also-it last a long time)
2 C. hot tap water

In a mixer, mix dry ingrediants. Add lecithin (instead of using measuring spoon I pour it directly on to flour mixture. A T. is about the size of quarter-I do it different everytime and it always works) and water. Mix 1 minute add water if needed (I always need too) The dough should be sticky (if it gets too sticky add a little flour). Mix 5 minute. DO NOT ADD ANYTHING AFTER THE 5 MINUTES) Spray counter with Pam spray Knead dough by had 4 times created a neater ball. Shape loaves and put in sprayed pans. Cover and raise for 25 minutes. Bake at 350 for 25 minutes.
VARIATIONS. all variations still cook at 350 for 25 minutes. Alter serving size of recipe according to amount making.
Pizza crust. Make dough. Shape, toppings, cook. NO RISING NEEDED. This will make 2 thick crust pizzas, half recipe for one.
Bread sticks. Half dough recipe. Roll into a rectangular shape. Cut vertical strips. Fold in half, pinch ends and twist and elongate. Lay in pan with melted butter on the bottom. Coat both sides and RAISE. Sprinke with cinnimon sugar or parmesean and garlic. Cook.

My cousin and I thought it would be fun to have a blog that anyone can post some of their favorite or new recipes so others can get on and get some ideas, I volunteered to start it up. So here it goes. Post your recipe. Let's make them pretty easy, not too fancy, mostly everyday food ideas. Add a picture if you are so inclined. In the label box specify what meal its for. We'll see how it goes.
